Southern Pecan Pie

I should have been a housewife

I usually like to make a pecan pie each year around Thanksgiving since they taste soo much better homemade. Since I didn't have much time for baking this past year with boards right around the corner, I decided to make some for dessert last night.

Southern Pecan Pie

1 piecrust, homemade or frozen
1 cup light corn syrup
1 cup packed light brown sugar
1/2 teaspoon salt
5 1/3 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
3 large eggs
2 1/2 cups toasted pecan halves


1. Preheat oven to 350 F. Cook pie crust for 10 minutes then remove from oven (leave oven on). While piecrust is baking, combine corn syrup, brown sugar, salt, vanilla extract, and butter in a medium bowl. Beat eggs and add to mixture.

2. Finely chop 1/2 cup of toasted pecans and line the bottom of the cooled piecrust with them. Rough chop 1 cup of pecans and add to the wet ingredients. Reserve 1 cup of pecans for decorative top.

3. Pour wet ingredients into the pie crust over the finely chopped pecans.





4. Add whole pecan halves in a decorative pattern starting with the outer row. For each row I like to put the fatter end of the nut towards the outside of the pie so they fit a little better.





5. Bake for 40-50 minutes until a sharp knife inserted into the pie comes out clean. Cool completely before serving.




I like to serve my pecan pie with vanilla bean ice cream and whipped cream, but this pie is so good to almost don't need it.

Past Sugar Cookie Projects

Before heading to Atlantic City for a conference this weekend, I thought I'd do a quick post on previous sugar cookies I have made. My sugar cookie obsession started after stumbling upon the Sweet Adventures of Sugarbelle, the cookies are out of this world amazing. The blog features step by step instructions with photos, recipes, tips, and a whole bunch of extras.

My first attempt at making intense sugar cookies was for Thanksgiving last year. I just followed the step by step instructions for Sugarbelle's decorated turkey and pumpkin cookies and here's how they turned out. 







Pretty good for my first time, eh?! They took me about a day and a half to make, but that included the baking of the cookies and drying time in between icing colors.

The next set I made was for Christmas of last year and I followed this reindeer tutorial, which was actually a guest post, leaving out a few of the more ornate finishing details. I also added a few cookies of my own design including customized Santa hats and snow topped candy canes.

The last set of cookies I'm going to sugar with you are ones that I made at the end of my low vision rotation in optometry school. They were mini retina cookies with various ocular diseases.

These were ones I designed completely by myself and I was really happy with how they came out.

Past Cupcake Projects

I love baking. Mostly I love eating what I bake. I haven't been making cupcakes recently, too many cupcakes with too many details left me feeling a little burnt out afterwards. Here are some of the projects I've made in the past from many different books and some original ideas of my own. Enjoy!
